Cocktail Recipe – The Bonnie & Clyde Cocktail by Regina Butler of Blackbird San Francisco

The following is a drink created by bartender Regina Butler from Blackbird Bar in San Francisco.  As one of the bars barrel aged cocktails off of their Winter menu, The Bonnie & Clyde was cleverly built upon High West Silver Whiskey, Dolin Blanc, J Witty Chamomile Liqueur and Bar Code Baked Apple Bitters and tasted like a slightly floral and apple tinged relative of a very good Manhattan.   At home, I do not own a barrel and so did not age my homemade recreation of this drink.   For that reason I substituted Buffalo Trace White Dog for the High West Silver because I find it superior in un-aged form.  It worked well but still did not have the depth and complexity of the aged version Regina had made me.

The Bonnie & Clyde Cocktail

Ingredients

1 Barrel is filled with the following with the portion per drink ratio as follows:

1.5 oz. High West Silver Whiskey
0.5 oz. J Witty Chamomile Liqueur
1 oz. Dolin Blanc Vermouth
2 dashes Bar Code Baked Apple Bitters

Method

Mix all ingredients in large enough quantities to fill a used bourbon barrel and age for one month.  Do not re-use the barrel.  Decant from barrel into glass bottles to stop the aging and close tightly until service.  To serve, pour cocktail into chilled shaker and shake to cool then strain into chilled coupe glass.
