The Sazerc Cocktail by Sean Hoard of PDT

This was the Sazerac Cocktail I had at PDT in New York’s East Village. I’ve seen Sazerac recipes that call for rye or cognac but never both. Sean Hoard my bartender one night at PDT made me this version which mixes both to achieve incredible balance. This was a damn fine Sazerac.

The Sazerac Cocktail by Sean Hoard of PDT

Recipe:

1 cube of brown sugar

1 dash of Peychaud’s bitters

1 dash of Agnostura bitters

1 oz cognac

1 oz of rye whiskey

Absinthe to rinse the glass.

2 slices of lemon peel

Method:

Chill a rocks glass with ice.

Place one dash of each bitters, the cognac and rye into an ice filled cocktail shaker and shake vigorously to combine.

Empty the rocks glass and pour a small bit of absinthe into the glass and spin or swirl the glass to get the absinthe to coat the inside. Then pour out any excess absinthe.

Strain the contents of the shaker into the cocktail glass. Twist both slices of lemon peel over the drink to release their oil/essence into the glass and then wipe the interior of the rim of the glass with the lemon peel. Serve proudly and enjoy. Cheers!
